Judith Gail Mitchell, Kaukauna, age 83, died Saturday, October 11, 2025. She was born in Appleton on July 23, 1942, to the late Harold and Pearl (Dittman) Hurst. Judy graduated from Kaukauna High School in 1960 and married Mathew Mitchell at St. Mary Parish on January 21, 1961. Before staying home to raise their 12 children, she worked at the Kaukauna Hospital and Simons Cheese. Judy enjoyed knitting, embroidery, and painting the wood crafts that she and Matt made together. She loved being up north in the off season, spending time at Holiday Acres and the Point, taking in the fall colors, and even getting snowed in. She loved angels and snowmen. In the summer, Judy enjoyed camping with the family in the bus and finding a lake to cool off in. She also enjoyed making cut out cookies and decorating them. Easter involved egg ticking, which inevitably turned into egg wars. She was a fiercely competitive card player and was known to say, "there is no love in cards," a lesson the grandkids learned early.
Judy is survived by her husband of 64 years, Mathew; children: Todd, Weyauwega; Mark (Debbie), Appleton; Hope (Bill) Welch, Ohio; Kathy (Jack) Schmeisser, Collins; Ellen Pennings, Appleton; Pete (Stacey), Montana; Sarah, Appleton; Dawn, Appleton; John (Ivy), Weyauwega; Mary (Steve) Terry, Kaukauna; and Jason, Watertown; 31 grandchildren; 32 great grandchildren; siblings: Shirley Linzmeyer, Connie (James) Sericoti, and Scott (Becky) Hurst; and brothers and sisters-in-law: Kathy Hurst, Boniface Mitchell, Marion Biesterveld, Barb Vanderloop, Dot Mitchell, and Larry (Linda) Mitchell. She is further survived by nieces, nephews, other relatives, and friends.
In addition to her parents, Judy was preceded in death by her son, Jim; son-in-law, Mark Pennings; grandsons: Jeremy Welch and Bo Waalkens; father and mother-in-law: Peter and Ella Mitchell; siblings: Dick Hurst and Lynn (Jeff) Tepolt; and brothers and sisters-in-law: Gene Linzmeyer, Edna, Rita, Leo, Kathy and Elsie Mitchell, Gene Vanderloop, and Virg Biesterveld.
Visitation will be held Thursday, October 16, 2025 at HOLY CROSS PARISH (309 Desnoyer Street, Kaukauna) from 1:00 p.m. until 2:45 p.m. Her Funeral Mass will follow at 3:00 p.m. with the Rev. Sudha Sivvam officiating. Committal Holy Cross Cemetery.
